Our syrup begins in one of Canada’s northernmost sugar bushes, on a remote mountain accessible only by snowmobile or ATV. In this rugged setting, we craft syrup the traditional way—no shortcuts, just hard work and time-tested methods. Every bottle reflects the dedication and effort behind it.
We craft our syrup using a wood-fired evaporator, sticking to traditional methods for a bold, smoky flavor. Aged in whiskey barrels for three months, it gains rich depth with subtle whiskey notes. Every batch is handmade with a focus on quality and tradition.
In the serene Lorraine Valley near Lake Temiskaming, our sugar shack stands as a gateway to history, rooted in the legacy of Mission Saint-Claude. Founded in 1863 by Oblate missionaries, the mission was a beacon of hope and community for settlers and Indigenous peoples alike. The surrounding forest, including our sugar bush, played an essential role in sustaining life at the mission, where the production of maple syrup was a vital practice.
One of the most fascinating stories from the mission’s history is that of a hermit who found his way to this very sugar shack. Drawn by the solitude and natural beauty of the Lorraine Valley, he made his home in the forest, living simply and harmonizing with the land. His presence at the sugar shack became part of the lore of the mission, symbolizing the unique bond between humanity and nature that this land fosters.
For the past ten years, our family has been privileged to carry forward the traditions of this historic sugar bush. Spanning three generations—my grandfather, my father, and now me—we’ve embraced the timeless craft of making maple syrup. With every harvest, we honor the legacy of Mission Saint-Claude, the hermit who once roamed these woods, and the enduring spirit of resilience and self-reliance that defines this land.
Our maple syrup is more than a product; it’s a connection to the stories and people who have shaped this valley for over a century. Every drop is steeped in history, tradition, and the natural wonder of the Lorraine Valley.
